Cheesy Avocado Hash browns
Okay, let's be honest, this isn't the healthiest recipe I've ever created but... treat yo self.
This dish is made up of a few of my favorite things; fried potatoes, avocados and of course, CHEESE!
My kitten, Cara, was definitely wanting to get in on this cheesy goodness. ;)
Recipe Serves 2 people:
4 Frozen Hash browns (or homemade, but I didn't have time today)
4 Slices of your favorite vegan cheese (I used Follow Your Heart, American Slices)
1 Avocado, halved and thinly sliced
1/8 Sweet Red Onion, thinly sliced
Desired amount of Just Mayo Thousand Island Dressing
Sea Salt, Garlic Powder & Pepper, to taste
Heat a cast iron griddle over medium/high heat with desired oil (I use avocado oil)
Fry 4 hash browns until golden and crispy on one side, flip and add cheese slices, cover with a large lid and allow the cheese to melt (about 2-3 minutes). Plate hash browns, top with dressing, avocado & onion, finish with spices.
