'Tuna' Sushi Rolls

I'll be honest with you guys, one of the things I've craved the most since going vegan has been sushi. I have a lot of special memories associated with sushi, from my 18th birthday with my now husband, to our honey moon in New York City, sushi will always have a special place in my heart and that made giving it up extremely difficult. Thankfully there are tons of veggies out there that can be manipulated into mimicking the textures and flavors fish. So here is goes... Tomato (tuna) Sushi!

Nori Sheets

Bamboo Sushi Mat

A super sharp knife

Ingredients for Tuna:

2 Whole Tomatoes

1/3 Cup Soy Sauce (Gluten Free, if needed)

2 Tbsp Kelp Powder or Seaweed Powder (Just blend nori until powder is formed)

1 Tbsp Sesame Oil

1 Tbsp Mirin

1 tsp vegan sriracha (or to taste)

1 tsp garlic powder

Process:

In a medium pot, bring 4 cups of water to a boil. Place whole tomatoes in the boiling water and allow to steam until skin begins in split and tomato is slightly tender (about 4 minutes). While tomato is cooking, mix together the marinade ingredients in a medium mixing bowl and set aside. Transfer hot tomatoes into an ice bath and allow to cool for about 1 minutes. Place tomatoes on a large cutting board and peel away the skin, cut tomato in half and carefully slice out the seeds, leaving just the outer layer of tomato, discard scraps. With remaining layer, slice into 1 into medium/thin strips (like tuna). Transfer tomato slices into marinade and set aside.

Other ingredients:

Prepared Sushi Rice (I use this recipe: http://allrecipes.com/recipe/99211/perfect-sushi-rice/ )

1 Cucumber, Julienned

1 Avocado, Thinly Sliced

1/8 Tofu block, Julienned and fried (optional, I just like the texture it adds)

1/4 Cup Vegan Mayo + 1 Tbsp Sriracha, (Spicy Mayo) For Garnish

Vegan Caviar, (Optional) For Garnish (https://www.amazon.com/dp/B00XBOA3QS/ref=sr_ph_1_a_it?ie=UTF8&qid=1501176507&sr=sr-1&keywords=caviar)

Wasabi Paste & Soy Sauce, For serving

On a bamboo mat place nori sheet shiny side down, with wet fingers cover nori with a thin/even layer of prepared sushi rice, leaving a 1" strip bare at the top. Layer tomato, cucumber, avocado, tofu and begin to roll tightly. This process is hard to explain in writing, so here is a very short youtube video: (https://www.youtube.com/watch?v=swGJ2dIu9XE) Repeat process until all ingredients are used, about 5 rolls.

Once your rolls are assembled, garnish with spicy mayo & caviar and enjoy!
