15 Minute Ramen

I get an hour for my lunch break every day, which seems like a lot of time, but when you cook all of your food (essentially) from scratch, your lunch hour can be eaten up quite quickly. This recipe is for a super easy 'ramen' that can be thrown together and into your bowl within 15 minutes.

Vegan Ramen

Serves 2


5 Cups Water

1/4 Cup Miso Paste

1/3 Cup Dried Shiitake Mushrooms

2 Green Onion Stalks + 2 Cloves Garlic, finely minced together

1/4 tsp Turmeric (For color)

10 oz Chuka Soba (Japanese Curly Noodles) These can be found online, or at an Asian Market for super cheap.

1/2 Package Extra Firm Tofu, Diced

Sriracha, Green Onion, Toasted Sesame Oil and Black Pepper for Garnish

Bring water to a boil in a medium pot over high heat, reduce heat to medium and add miso paste, stir until incorporated. Add dried mushrooms and minced onion/garlic, stir. Add Chuka Soba and tofu, cover and allow to cook for 5 minutes. Add Turmeric and stir. Check noodles, if they are tender you are ready to plate, if not, cook a bit longer. Once noodles are at desired texture, transfer to a bowl and top with chopped green onion, sriracha, sesame oil and black pepper to taste.
