ABC Soup!

Do you have kids? Do they like soup? Are you grown adult with no children, like myself, but happen to thoroughly enjoy a bowl of soup with the alphabet swimming around in it? Well, regardless of your situation, I have a recipe for you! 

 

 

 

 

This ABC Soup comes together in less than an hour, which is awesome for a busy weeknight dinner. The recipe also makes enough to serve about 6 people, so cut it down if need be, or make it all and freeze some for a later day.

 

 Ingredients:

 

1 Tbsp olive oil

1 yellow onion, diced

1 large russet potato, diced

1 zucchini, diced

3 celery stalks, chopped

4 cloves garlic, minced

3 Cups frozen veggie mix (carrots, peas, corn)

1, 6oz can tomato paste

2 cups veggie stock + Water (4 quarts total)

2 tsp Italian seasoning

1/2 tsp rosemary, finely chopped 

1 Tbsp sugar of choice *To cut acidity of tomato base. I used pure cane sugar.

1, 7.05 oz bag of alphabet pasta, I got mine at ALDI for $0.39

sea salt & black pepper to taste

 

Method:

 

Heat olive oil in a large stock pot over medium/high heat

Saute onions and celery until tender

Add garlic and saute

Stir in potatoes, zucchini and the tomato paste

Pour in stock and water

Add spices and sugar, stir, and bring to a boil

Reduce heat to a simmer and allow to cook for about 15 minutes, or until potatoes are fork-tender

Carefully stir in Frozen veggies and cook for another 5 minutes.

Add pasta and cook for about 8 minutes.

Taste, and add salt and pepper as needed.

Serve with toasted bread, rolls, or crackers.
