1970's Pineapple Upside Down Cake

Our latest episode of Baking a Murderer was about Dean Arnold Corll, AKA The Candy Man, he was a prolific serial killer in the 1970's. After we finished recording, we really needed a sweet pick-me-up, because holy moly, that story is dark!.. So we enjoyed this delicious Pineapple Upside Down Cake, and it made everything better. ;) Listen to our episode here!

 

 

 

Ingredients:

 

1/4 Cup vegan butter (I used Earth Balance Buttery Sticks)

2/3 Cup Brown Sugar

1 Can Sliced Pineapple, drained

1 Jar Maraschino Cherries, without stems

1 1/3 AP Flour

1 Cup Pure Cane Sugar (Not turbinado)

1/3 Cup Shortening

1 1/2 tsp Baking Powder

1/2 tsp Fine Sea Salt

3/4 Cup Unsweetened Plant Milk (I used coconut)

1 vegan "egg"- 1 Tbsp egg replaced powder + 2 Tbsp cool water, whisked together

 

Method:

 

1. Preheat oven to 350ºF

2. Place 1/4 cup of butter in a 9x9 pan and put in hot oven to allow butter to melt

3. Once butter has melted, carefully remove pan from oven and sprinkle brown sugar evenly over melted butter. Arrange pineapple slices on top of brown sugar, and then add cherries to the center of the pineapples, and wherever else you'd like. (See top photo.) Set pan aside while you prepare the cake batter.

4. In a large mixing bowl, combine all remaining ingredients. Using a hand mixer on low speed, carefully mix the ingredients together until they begin to form a batter. Increase speed to high, and beat for 3 minutes. (This seems like a long time for a cake batter, but this some some crazy voodoo magic and makes the cake amaaaazing.)

5. Scrape batter onto pineapple/cherries, and carefully spread out without disturbing fruit. Butter will creep up the edges, this is totally okay! The melted better on the edges makes a delicious crust that is to die for.

6. Bake for 40 minutes, and then reduce heat to 300ºF and bake for an additional 15 minutes, or until an inserted toothpick comes out clean. 

7. Once cake is finished baking, place a heat-proof plate/tray on your counter. You are going to flip the hot cake out onto the plate. This is a little scary, and could easily be dangerous, so please please please use oven mitts and ask for help if you need it. Place plate on top of baking dish, and then hold the two together with oven mitted hands. Quickly flip the cake onto the plate and remove the baking dish. There will be a gooey sauce that spills out onto the plate, this is supposed to happen. If a few pineapples stick to the baking dish, that's okay too. Carefully remove stuck fruit and put it back on the cake where it belongs. :)
