BBQ (Cauliflower) Wings

Cauliflower wings have now been a Riddle Family staple for about four years. We love them, and so do our friends and family. Today is Super Bowl Sunday 2020, so I thought it was a good time to update my recipe and re-share it with all of you, because who doesn't love wings on game day? (Or any day?) I know, I know... it sounds absurd, but cauliflower wings are seriously the bomb. Last year I made these babies at a family event and they were demolished well before the "real" barbecue. My two non-vegan brother-in-laws even asked for seconds, which was huge for me! I love making these for people and not telling them that they're vegan, surprisingly enough most people don't even catch on until their second or third wing.

This recipe is definitely not the healthiest, as it is breaded, fried and then drenched in sugary BBQ sauce, but you know... everything in moderation, right? ;)

This is the perfect dish to bring to a cookout, Super Bowl party, or game night.

Let's get to it!

For the wings:

1 head cauliflower, cut into natural/bite size florets

For the egg wash:

2 cups neutral plant milk

3 Tbsp corn starch

2 tsp sea salt

Mix together in a medium size bowl, set aside.

For the breading:

3 cup AP flour (or Gluten Free, if needed)

1/4 cup nutritional yeast

3 Tbsp corn starch

1 Tbsp smoked paprika

1 Tbsp garlic powder

1 Tbsp onion powder

2 tsp black pepper

2 tsp sea salt

Mix together in a medium size bowl, set aside.

1. Heat neutral flavored oil over medium heat. I suggest using a large stainless steel pot. Make sure to use an oil that has a high smoke point, and to use enough to completely submerge (deep fry) the wings. If you have a household deep fryer, you can also use that! 2. In batches, dip florets in milk mixture and then dredge in flower mixture (repeated three times, ending with flour mixture)

3. In batches carefully fry the wings until golden brown and crisp.

4. Using a metal slotted spoon or metal tongs, removed the wings as they are finished cooking and transfer to a draining rack over a baking sheet.

5. Once all wings are finished cooking toss in your favorite sauce(s). I love BBQ and Buffalo, but you can use any sauce you enjoy! (These can easily be turned into orange "chicken", sweet and spicy, sesame, etc. and served over rice.)

6. Serve with your favorite vegan dipping sauce, we love ranch.

*If using buffalo sauce, be sure to serve the wings directly after tossing them in the sauce because they will get soggy quickly. BBQ sauce does not have the same issue. Buffalo sauce option pictured below on the bottom row.

And Remember; Wings are for Flying, not Frying!
